Pumpkin is a wonderful source of vitamin A and beta-carotene, making it a tasty and healthy addition to your diet. With autumn in full swing and pumpkin in season, be sure to pick some up at your local grocery to make this delicious smoothie, reminiscent of homemade pumpkin pie!
Makes 6 servings
1 15-ounce can pumpkin purée
2 cups soymilk, or to taste
2 cups ice
2 tablespoons maple syrup, or to taste
1 tablespoon vanilla extract, or to taste
1 tablespoon pumpkin pie spice, or to taste (alternatively, can use a combination of cinnamon, nutmeg, and allspice)
Combine all ingredients in blender. Blend for 1 to 2 minutes until everything is incorporated.

My greatest feat of the week so far - berries and cream paleo popsicles:
I first diced up some fresh strawberry and set some fresh chunks in the molds before blending and pouring the rest in (allowing half an inch at the end for freezing expansion):
- a full can of coconut milk
- 1 cup frozen blueberries
- 1 cup frozen strawberries
- 1 tsp. pure vanilla extract
- a couple squirts of agave
I plan on experimenting with more flavors soon since this batch is already almost gone (thanks, D). ALSO, they’re a nice option to have when friends are eating sugary, processed desserts and you know if your boyfriend cheats and has dairy or gluten, he’ll complain about his stomach the rest of the night. I like to keep my days as complain-free and full of cuddles as possible.
Paleo bread (4 eggs, 1 1/4 cup almond butter, 1 1/2 tablespoons of lemon juice and 3/4 teaspoon of baking soda - stolen from Caveman Jeff, modified just a little as the recipe calls for more almond butter but I ran out).

We enter a little coffeehouse with a friend of mine and give our order. While we’re aproaching our table two people come in and they go to the counter:
‘Five coffees, please. Two of them for us and three suspended’ They pay for their order, take the two and leave.
I ask my friend: “What are those ‘suspended’ coffees?”
My friend: “Wait for it and you will see.”
Some more people enter. Two girls ask for one coffee each, pay and go. The next order was for seven coffees and it was made by three lawyers - three for them and four ‘suspended’. While I still wonder what’s the deal with those ‘suspended’ coffees I enjoy the sunny weather and the beautiful view towards the square infront of the café. Suddenly a man dressed in shabby clothes who looks like a beggar comes in throught the door and kindly asks
‘Do you have a suspended coffee ?’
It’s simple - people pay in advance for a coffee meant for someone who can not afford a warm bevarage. The tradition with the suspended coffees started in Naples, but it has spread all over the world and in some places you can order not only a suspended coffee, but also a sandwitch or a whole meal.
Wouldn’t it be wonderful to have such cafés or even grocery stores in every town where the less fortunate will find hope and support ? If you own a business why don’t you offer it to your clients… I am sure many of them will like it.

Perfectly Roasted Seasoned Potatoes
What you’ll need:
- 1lbs chopped potatoes, any kind
- 2 tablespoons canola/olive oil blend (or any other high-heat oil)
- fresh rosemary, finely chopped (any dried herbs will work too)
- garlic, white pepper & nutritional yeast (to taste)
- sea salt (added after roasting!!)
- Preheat oven to 425°F
- In a roasting pan, toss the potatoes with everything but the salt
- Roast for 30-45 minutes stirring twice throughout
When potatoes are crispy and browned on the outside, remove roasting pan from the oven and toss potatoes with sea salt while still hot. Be careful not to burn yourself! Serve as a breakfast side or incorporate them in a main dish. The leftovers make great filling for vegan burritos! Enjoy ~ EA
